Yesterday, I attempted my third batch of the cookies that I’ve been working on that are compliable with a no sugar diet/plan.
After bringing this third batch into work this morning to see what my coworkers thought of them, I finally feel like the recipe is ready for sharing.
Here is the recipe for the cookies:
Almond Butter Oat Cookies
1 cup Medjool dates, pitted, chopped and soaked*
1 cup almond butter
1/2 cup old fashioned oats
2 tbsp. unsweetened cocoa powder
2 tsp. cinnamon
1 tsp. vanilla
a liberal pinch of salt
Preheat oven to 350. Line baking sheet with parchment paper.
In a food processor, combine the dates and almond butter. Place mixture into a mixing bowl. Add oats, cocoa powder, cinnamon, vanilla and salt. Mix well. Using approx. a couple tbsp. of mixture at a time, roll and form*cookies. Place cookies onto parchment paper lined baking sheet.
Bake at 350 for 5-7 min.
Let cool.

Yield: 1 dozen cookies
* The Medjool dates were soaked for approx. 10 min., but you can soak them for longer if you like. Medjool dates are the specific type of dates that I used, but feel free to swap Medjool for another variety you have.
*Form cookies almost like you would a burger patty.
